Terroir

Soils composed of fine grey-blue clays from the seabed.

Altitude: 250m.

Exposure: south.

Average age: 20 years.

Harvest: manual.

Arrival of grapes and fermentation

Destemming and crushing, spontaneous fermentation in stainless steel tank, with 10 days of maceration. Racking off and completion of fermentation in the tank. For the harvest 2021 a "ripasso" was done on the pomace of a more tannic must.

Refinement

Racking and aging in stainless steel or fiberglass for 12 months. Minimal addition of sulfur dioxide to the decanting. This wine is made only when the quantities of grapes harvested allow it. The winemaking technique may vary from year to year.

Notes

A young, refreshing and easy-drinking red wine, with bright and fruity aromas. Hints of plum, blackberry and black cherry prevail. The color is intense red with purple tones. The "ripasso" technique gives a light tannin that gives structure.

Suggested pairings

Aperitifs with platters of cold cuts and cheeses, savory vegetable pies, pizza. We suggest serving and drinking cool, especially during the summer months.

Service

We recommend serving this wine at a temperature of 14-18°C.
