Arrival of grapes and fermentation

Destemming and crushing, spontaneous fermentation in stainless steel tank, with 5-10 days of maceration. Racking off and completion of fermentation in the tank.

Refinement

Aging in stainless steel or fiberglass for 6 months. Bottling in the following spring. Minimal addition of sulfur dioxide during rackings.

Notes
An opaque macerated white wine, with an orange color and pronounced hints of chamomile and honey, freshly cut grass, ripe apricots and peaches, with a touch of tropicality. Expression of an aromatic grape, it has a marked acidity, a consistent body in the glass given by maceration on the skins, a particular persistence where the aromas continue to evolve.

Suggested pairings

Platters of cured meats and cheeses with mustards and honey, first courses such as ravioli del plin, cacio e pepe, grilled or raw fish dishes, seasonal vegetables, very spicy dishes.​
