Moscato Bianco (aromatic single variety) of our production, typical of our hills in Monferrato.

Terroir

Soils composed of fine grey-blue clays from the seabed.

Altitude: 250m.

Exposure: south.

Average age: 25 years.

Harvest: manual.

Arrival of grapes and fermentation

Direct press, spontaneous fermentation in stainless steel tank, until reaching 5.5 degrees of alcohol. Once this level is reached, fermentation is stopped by bringing the partially fermented must to a low temperature. A light filtering precedes bottling. Anima della Terra is currently our only DOCG production and is our only technical wine, as well as our only bottle to use a cork stopper (produced according to the specifications of Moscato d'Asti DOCG).

Refinement

Bottling in the winter of the same harvest. Minimal addition of sulfur dioxide.

Notes
Sweet sparkling wine with an intense yellow colour, low alcohol content, to be enjoyed chilled. It has pronounced hints of wildflower honey, chamomile and hawthorn flowers, white peach, pear, with a refreshing balsamic vegetal note. On the palate it is full-bodied thanks to the high sugar content and the velvety bubbles.

Suggested pairings

Both simple and elaborate desserts, cheeses with fruit compotes, honey and wholemeal bread. Ideal at the end of a meal with dry pastries and at Christmas with pandoro and panettone. It can also be paired with exotic and spicy dishes. A wine for a family toast, as per local family tradition.

Service

We recommend serving this wine at a temperature of 6-8°C.
