Aromatic single variety of our production, typical of our hills in Astesana and Monferrato.

Terroir

Soils composed of fine grey-blue clays from the seabed.

Altitude: 250m.

Exposure: south.

Average age: 25 years.

Harvest: manual.

The grapes arrive at the winery and pass through a destemming machine, where the stems are removed. Immediately afterward, the berries are mechanically crushed and the must is transferred to a tank (fiberglass or steel), where it begins to ferment naturally within a few hours. We do not add selected yeasts. For the 2024 vintage, we left the skins to macerate for 10 days, after which we racked them and added a small dose of sulfites after it finishes fermenting. We froze a portion of the must to use for the second fermentation in the bottle, which we carried out the following spring, at bottling. The wine is ready for the summer season.

2024 (first vintage)

Our most rock'n'roll wine! The fizziness is light but persistent, vivacious, the tannin is loaded, the alcohol is moderate (11,5%). Hints of plum, blackberry and black cherry. Our rural "vignaiolo" (farmer's wine), in a pet-nat version. To serve chilled, literally.

Pairing ideas

A summer barbecue, by the pool, or if you'd like something fizzy rather than a standard table wine.

Service

We suggest to serve this wine at a temperature of 8-10°C, to enjoy its refreshing fruitiness. At every sip, while the wine warms up a little inside the glass, hints and aromas will develop and become more defined.
